A delicious and creamy cauli ower mash with an extra avor of golden onion and cheddar cheese. And a lot of browned butter!

Tip!
Fry chopped onions in a generous amount of butter, until soft and golden in
color, but now brown. Set aside.
Shred the cauli ower with the coarse side of a grater, or divide into smaller
orets and mix in a food processor until rice-sized. Take a few at a time.
Pour heavy whipping cream in a pan. Stir in the cauli ower rice and boil on
medium heat. Let simmer for 10–15 minutes or more, until the cauli ower is
thoroughly cooked and the cream has boiled into the cauli ower. This will give
the mash a more neutral avor.
Salt and pepper to taste. Add fried onion and shredded cheese. Mix well and
keep hot.
Sauté butter on medium heat in a pan, until amber-colored for a nice and
nutty taste. Serve the butter with the mash.

You don’t have to remove all leafy parts, you can use the entire cauli ower for
making mash. Just remove the outside leaves. You can also use ready-made
cauli ower rice from the grocery store, fresh or frozen. Two pounds will be enough.
